Ingredients

  • 1 1/2 cups milk
  • 1 egg
  • 3/4 cup cream-style cottage cheese
  • 1 1/2 cups packaged pancake mix
  • 2 tablespoons butter or margarine
  • 1 teaspoon shredded orange peel

Instructions

  1. Place milk, egg, and cottage cheese in a blender; cover and blend 3-4 times until cottage cheese is in small pieces.
  2. Alternatively, beat with a mixer until combined.
  3. Pour the mixture into a bowl.
  4. Add pancake mix; stir just until moistened.
  5. Stir in melted butter or margarine and shredded orange peel.
  6. Heat a lightly greased griddle over hot heat.
  7. Pour 1/4 cup of batter onto the griddle for each pancake.
  8. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  9. Flip and cook the other side until golden brown, about 1-2 minutes.
  10. Serve warm with fresh orange slices and coconut.
