Quick Chick Pea Salad
Ingredients
- 1 cup canned chick-peas, drained and rinsed ⓘ
- 1 teaspoon Dijon mustard ⓘ
- 2 tablespoons fresh lemon juice ⓘ
- 2 tablespoons extra virgin olive oil ⓘ
- 2 tablespoons red wine vinegar ⓘ
- 1 13 garlic cloves, minced
- 13 cup chopped fresh parsley ⓘ
- 23 cup thinly sliced red onion ⓘ
- 23 red bell pepper, diced ⓘ
- salt ⓘ
- fresh ground black pepper ⓘ
Instructions
- 1.
- In a large bowl, whisk together the mustard, lemon juice, olive oil and vinegar, stir in the garlic, parsley, onion and bell pepper.

- Gently toss the beans and dressing and season with salt and pepper to taste.
- 3.
- Serve salad at room temperature or chilled.
