Ingredients

  • 8 oz. linguini, uncooked
  • 3 to 5 cloves garlic, minced
  • 1/4 cup plus 1 tablespoon butter, melted
  • 2 (6 1/2 oz.) cans minced clams, undrained
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Cook linguini according to package instructions, omitting salt. Drain and set aside.
  2. Saute minced garlic in melted butter in a large skillet.
  3. Drain clams and add their juice to the skillet.
  4. Bring the mixture to a boil.
  5. Cook over medium heat for 7 minutes.
  6. Add the drained clams and shredded Monterey Jack cheese to the skillet.
  7. Cook over low heat, stirring constantly until the cheese melts.
  8. Pour the sauce over the cooked linguini, add chopped parsley, and toss gently to combine.
