Ingredients

  • 8 cups sliced cucumber
  • 1 green or red pepper, diced
  • 1 medium onion, sliced
  • 2 Tbsp salt
  • 2 cups sugar
  • 1 cup vinegar

Instructions

  1. Mix sliced cucumber, diced pepper, and sliced onion in a bowl.
  2. Let stand for 2 hours to allow flavors to meld.
  3. Drain well but do not rinse before serving.
