Ingredients

  • 1 cup cooked rice
  • 1 1/2 tablespoons vegetable oil
  • 1/4 onion, thinly sliced
  • 1 clove garlic, chopped
  • 6 cups fresh spinach
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Prepare rice according to package directions and set aside.
  2. In a large frying pan or wok, cook onion in vegetable oil for a few minutes until translucent.
  3. Add garlic and stir, cooking for 1 minute.
  4. Add spinach and toss until spinach wilts.
  5. Add rice, salt, pepper, and nutmeg to the spinach mixture; toss together until well mixed and heated through.
  6. Remove from pan and serve.
