Quick Honey Gingerbread

Ingredients

  • 1 c. plain flour
  • 1/2 c. self-rising flour
  • 1/2 tsp. baking soda
  • 3 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 c. brown sugar
  • 1/2 c. honey
  • 1/2 c. water

Instructions

  1. Grease 19 cm x 29 cm baking pan; line base with paper and grease paper.
  2. Combine flours, soda, spices and sugar in processor; process a few seconds until combined.
  3. Combine honey, water and butter in saucepan; stir over low heat until butter is melted.
  4. Add to processor; process until mixture is smooth.
  5. Pour into prepared pan and bake in moderate oven for about 35 minutes.
  6. Dust with sifted icing sugar before serving.
