Ingredients

  • 1 can chicken broth
  • 1/4 cup small broccoli flowerets
  • 1 1/4 cups quick cooking rice
  • 2 teaspoons lemon juice

Instructions

  1. In a saucepan over high heat, bring chicken broth to a boil.
  2. Add broccoli florets and carrot pieces.
  3. When starting to boil, reduce heat to low, cover, and cook for 5 minutes or until vegetables are tender.
  4. Stir in uncooked quick cooking rice, lemon juice, and pepper.
  5. Remove from heat, cover, and let stand for 5 minutes or until liquid is absorbed.
  6. Fluff rice with a fork before serving.
