Quick Potato-Bean Salad
Ingredients
- 1 (16 oz.) can sliced potatoes, rinsed and drained ⓘ
- 1/2 c. sliced celery ⓘ
- 2 Tbsp. sliced green onion ⓘ
- 1 1/4 c. garbanzo beans, rinsed and drained ⓘ
- 1/4 c. sliced pitted ripe olives ⓘ
- 1/4 c. Italian dressing
- 1/2 c. cherry tomatoes, quartered ⓘ
- 2 sweet peppers, halved and seeded, or lettuce leaves (optional) ⓘ
Instructions
- In a large bowl combine the potatoes, garbanzo beans, celery, olives and onion.
- Add the salad dressing; toss gently to coat the vegetables.
- Cover and chill at least 2 hours.
