Quick Potato-Bean Salad

Ingredients

  • 1 (16 oz.) can sliced potatoes, rinsed and drained
  • 1/2 c. sliced celery
  • 2 Tbsp. sliced green onion
  • 1 1/4 c. garbanzo beans, rinsed and drained
  • 1/4 c. sliced pitted ripe olives
  • 1/4 c. Italian dressing
  • 1/2 c. cherry tomatoes, quartered
  • 2 sweet peppers, halved and seeded, or lettuce leaves (optional)

Instructions

  1. In a large bowl combine the potatoes, garbanzo beans, celery, olives and onion.
  2. Add the salad dressing; toss gently to coat the vegetables.
  3. Cover and chill at least 2 hours.
