Ingredients

  • 1 lb. turtle
  • 3 Tbsp. chicken fat or butter
  • 1 medium onion
  • 1 1/2 cups chicken broth
  • salt
  • pepper

Instructions

  1. Cut the parboiled turtle meat into small dice.
  2. Brown the diced turtle meat slowly in chicken fat or butter.
  3. Add chopped onion and sauté slowly over medium heat until the onion is soft and yellow.
  4. Add the mixture to chicken broth in a soup pot.
  5. Season with salt and pepper.
  6. Simmer gently for 10 minutes.
  7. Serve with a sprinkling of chopped parsley and a slice of lemon floating on top.
