Ingredients

  • 2 slices bacon
  • 16 oz. can mixed vegetables (undrained)
  • 16 oz. can tomatoes (undrained)
  • 1/2 Tbsp. instant beef bouillon
  • 1/8 tsp. garlic powder
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Place bacon in a single layer in a 1 1/2-quart microwave-safe casserole.
  2. Cover with a paper towel.
  3. Microwave on High for 2 to 3 minutes or until crisp; set aside.
  4. Preserve 1 tablespoon of bacon drippings; discard the remainder.
  5. Add the canned vegetables, canned tomatoes, chopped onion, instant beef bouillon, and garlic powder to the drippings in the casserole.
  6. Cover with the casserole lid.
  7. Microwave on High for 9 to 11 minutes or until steaming hot and flavors are blended.
  8. Crumble the cooked bacon and add it to the soup.
  9. Serve the soup in bowls and sprinkle with grated Parmesan cheese.
