Ingredients

  • 1 rabbit, dressed
  • salt
  • 1 onion, chopped
  • margarine
  • 2 eggs, beaten
  • 1/2 cup milk
  • flour

Instructions

  1. Boil the dressed rabbit in salted water with the chopped onion until the meat falls from the bones.
  2. Dice the cooked rabbit meat.
  3. Prepare the noodle dough by adding milk and some salt to the beaten eggs.
  4. Add enough flour to the egg mixture to make a stiff dough.
  5. Roll out the dough to a thickness of 1/4 inch or less.
  6. Cut the dough into 1 1/2-inch squares.
  7. Cover the bottom of a greased baking pan with a layer of noodles.
  8. Add a layer of diced rabbit meat over the noodles.
  9. Continue layering noodles and meat until both are used up.
  10. Pour the broth in which the rabbit was cooked over the layered ingredients.
  11. Bake at 375°F (190°C) for 30 minutes.
