  3. Beat with an electric mixer on low speed or cover the food processor bowl and process until well combined.
  4. The mixture will be crumbly.

  6. Shape into a 4 1/2-inch round about 1 inch high.
  7. Wrap in clear plastic wrap and chill several hours or overnight.

Tips & Substitutions

For a creamier texture, consider mixing in a little cream cheese or sour cream with the cheeses. If you can't find Gruyere or Swiss, a blend of mozzarella and cheddar can work as a substitute. Fresh herbs like thyme or chives may also enhance the flavor profile. Adjust the amount of hot pepper sauce to suit your spice preference, and try adding a touch of garlic for an extra kick.

Serving Suggestions

Serve this Raclette-Style Cheese spread on toasted French bread for a delightful appetizer. It pairs beautifully with Fancy Carrots or a fresh salad for a light meal. You can also add pimiento slices on top for color and flavor. For a more substantial dish, consider serving it alongside Belgian Steamed Mussels or as part of a cheese board.

Storage & Reheating

Store any leftover cheese mixture in an airtight container in the refrigerator for up to 3 days. If you want to reheat it, place it in a microwave-safe dish and heat in short intervals, stirring in between, until warm. Alternatively, you can bake it at 350°F until heated through, which will help retain its creamy texture.

Can I use different types of cheese for this recipe?

Absolutely! While Gruyere and Gouda are traditional, you can experiment with other cheeses such as fontina, cheddar, or even a spicy pepper jack for a different flavor. Just ensure the cheese melts well to achieve that perfect creamy texture.

How long can I chill the cheese mixture before serving?

You can chill the cheese mixture for several hours or even overnight to enhance the flavors. If you need it ready faster, a minimum of 1-2 hours in the refrigerator should suffice, but longer chilling will yield a firmer texture.
