Vibrant rainbow fruit cups combine creamy yogurt, fresh mixed fruits, and colorful sherbet for a delightful, refreshing treat perfect for gatherings or a fun dessert for all ages.

Ingredients

  • 1/2 cup vanilla yogurt
  • 1/2 cup frozen whipped topping, thawed
  • 2 tbsp orange juice
  • 1 1/2 tsp orange zest
  • 2 (11 oz) cans mandarin oranges, drained
  • 2 cups juice-pack canned pineapple chunks
  • 2 bananas, sliced
  • 2 red apples, peeled and sliced
  • 1 gallon rainbow sherbet

Instructions

  1. Mix the vanilla yogurt, thawed whipped topping, orange juice, and orange zest in a medium bowl. Chill, cover, and refrigerate.
  2. Combine the drained mandarin oranges, undrained pineapple chunks, sliced bananas, and sliced red apples in another medium bowl. Mix gently. Cover and refrigerate.
  3. Spoon one scoop of rainbow sherbet into each of 16 dessert goblets or bowls.
  4. Add several tablespoons of the mixed fruit over the sherbet in each serving.
  5. Top each with the prepared yogurt mixture before serving.
