- Mix the vanilla yogurt, thawed whipped topping, orange juice, and orange zest in a medium bowl. Chill, cover, and refrigerate.
- Combine the drained mandarin oranges, undrained pineapple chunks, sliced bananas, and sliced red apples in another medium bowl. Mix gently. Cover and refrigerate.
- Spoon one scoop of rainbow sherbet into each of 16 dessert goblets or bowls.
- Add several tablespoons of the mixed fruit over the sherbet in each serving.
- Top each with the prepared yogurt mixture before serving.
