Ingredients

  • 2 cups milk
  • 1 packet dry yeast
  • 1 3/4 cups buckwheat flour
  • 1/2 teaspoon salt
  • 1 tablespoon molasses
  • 1 egg
  • 1/2 teaspoon soda
  • 1/4 cup warm water

Instructions

  1. Scald and cool the milk.
  2. Add the dry yeast and stir until dissolved.
  3. Stir in the buckwheat flour and salt to form a batter.
  4. Cover and let rise for 12 hours or overnight.
  5. Stir in molasses, the soda mixture, egg, and melted shortening.
  6. Ladle the batter onto a hot skillet, as you would with pancakes.
  7. Serve with hot syrup or bacon gravy.
