Ingredients

  • 1 cup sieved, cooked potatoes
  • 1 cup liquid reserved from cooking potatoes
  • 3/4 cup shortening
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 package yeast
  • 2 eggs
  • 3/4 cup warm water
  • 5 to 6 cups flour

Instructions

  1. Mix cooked potatoes, reserved potato liquid, shortening, salt, and sugar until well combined.
  2. Dissolve the yeast in warm water and let it sit until frothy.
  3. Stir the yeast mixture into the potato mixture.
  4. Add eggs and enough flour to make a manageable dough.
  5. Turn the dough onto a lightly floured surface.
  6. Knead until smooth and elastic, about 5 to 8 minutes.
  7. Place the dough in a greased bowl, cover, and let it rise until doubled in size.
  8. Punch down the dough and roll out to 3/4-inch thickness on a floured surface.
  9. Cut out doughnuts with a floured cutter.
  10. Let the cut doughnuts rise until doubled in size, about 1 hour.
  11. Heat oil to 375°F and fry the doughnuts until golden brown.
