Ingredients

  • 3 medium sweet potatoes
  • 1 egg
  • 2/3 cup brown sugar
  • 2 Tbsp melted butter
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 6 slices pineapple
  • 6 marshmallows

Instructions

  1. Boil sweet potatoes in jackets until tender.
  2. Peel the sweet potatoes and mash them finely.
  3. Mix in beaten egg, brown sugar, melted butter, nutmeg, and salt.
  4. Preheat oven to medium temperature.
  5. Place a pineapple slice on each serving dish.
  6. Spread a one-inch thick mound of the sweet potato mixture over each pineapple slice.
  7. Top each with a marshmallow.
  8. Bake in the oven until marshmallows are golden brown.
  9. Remove from oven and serve.
