Ingredients

  • 3 eggs, separated
  • 1 1/2 cups milk
  • 1 3/4 cups flour
  • 4 teaspoons baking powder
  • 1/2 cup oil
  • 1/2 teaspoon cinnamon
  • 1/4 cup raisins
  • 1/2 teaspoon salt

Instructions

  1. Mix flour, salt, baking powder and cinnamon in a large bowl.
  2. Beat egg whites until stiff in a separate bowl.
  3. Combine yolks, milk, oil and raisins in a third bowl.
  4. Add the milk mixture to the flour mixture and stir just until blended.
  5. Fold in the beaten egg whites.
  6. Pour batter onto a hot waffle iron and cook until golden brown.
