Ranch Stuffed Peppers

Ingredients

  • 1 lb. hamburger or ground turkey
  • 1 small onion, chopped
  • 1 pkg. Ranch dressing mix
  • 8 to 10 medium to large bell peppers (red, green or yellow or mixed)
  • 2 fresh tomatoes, chopped
  • 1 c. sour cream or nonfat yogurt

Instructions

  1. Brown meat with onion until done.
  2. Drain excess fat.
  3. Stir in dry Ranch dressing mix.
  4. Add fresh tomatoes and cooked rice.
  5. Let cool while preparing peppers, then add sour cream.
