Ingredients

  • 1/3 cup chopped onion
  • 1 tablespoon butter or margarine
  • 1 cup yellow cornmeal
  • 1/2 pound bacon, cooked crispy and well drained
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • dash of pepper
  • 2 eggs, well beaten
  • 2 cups milk or buttermilk

Instructions

  1. Saute the chopped onion in butter until tender, about 5 minutes; set aside. Cook the bacon until crispy; drain well.
  2. In a large bowl, combine the cornmeal, bacon bits, salt, baking soda, and pepper.
  3. In a separate bowl, beat the eggs and add the milk; mix well.
  4. Gradually add the buttermilk mixture to the cornmeal mixture, stirring constantly.
  5. Add the cooked onions to the batter and stir to combine.
  6. Pour the batter into a greased 3/4 x 7 x 1 1/2-inch oblong pan.
  7. Bake in a 425°F (220°C) oven for 20 minutes until golden brown.
  8. Cut into squares and serve warm.
