Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1/3 cup crushed soda crackers
  • 1/2 cup finely chopped pecans
  • 1/4 teaspoon vanilla
  • 1 (1 pound) can peach halves, drained and thinly sliced

Instructions

  1. Beat egg whites until peaks form.
  2. Gradually add sugar, beating until stiff peaks form.
  3. Fold in crushed soda crackers, chopped pecans, vanilla, and sliced peaches.
  4. Spread the mixture over the bottom and sides of a greased 9-inch pie pan.
  5. Bake at 325°F for 30 minutes.
  6. Reserve several peach slices for garnish.
  7. Once cooled, alternate layers of whipped topping and peach slices on the crust, ending with a topping layer.
  8. Chill until ready to serve.
