Ingredients

  • 1/2 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup orange juice
  • 2 tablespoons orange rind
  • 1/2 cup chopped nuts
  • 1 cup chopped cranberries

Instructions

  1. Beat margarine and sugar until light and fluffy.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Combine dry ingredients (flour, baking powder, salt, baking soda) in a separate bowl.
  4. Add dry ingredients to the creamed mixture, alternating with orange juice, mixing well after each addition.
  5. Stir in orange rind, chopped cranberries, and chopped nuts.
  6. Pour batter into a greased and floured 9 x 5-inch loaf pan.
  7. Bake at 350°F for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 5 minutes; remove from pan.
  9. Serve with Sweet Orange Spread.
