  • 1/2 tsp. oregano, crushed
  • 1.5 cups shredded cooked chicken
  • 4 oz. can whole green chiles, cut into strips
  • 4 flour tortillas
  • 2 tsp. red wine vinegar

Instructions

  1. In a large skillet, cook the onion in 1 tablespoon of oil until tender-crisp.
  2. Drain the stewed tomatoes, reserving the liquid.
  3. Add the reserved liquid and crushed oregano to the skillet; cook over high heat for 3 minutes, stirring frequently.
  4. Stir in the shredded chicken and green chiles; remove from heat.
  5. Spoon the chicken mixture into each flour tortilla and roll up.
  6. Add the remaining tablespoon of oil to the skillet and lightly brown the roll-ups.
  7. Chop the drained tomatoes and stir in the red wine vinegar.
  8. Pour the tomato mixture over the roll-ups, cover, and cook over low heat for 3 minutes.

Tips & Substitutions

For added flavor, consider using smoked paprika or cumin in the chicken mixture. If you want a vegetarian option, substitute the chicken with black beans or sautéed vegetables. You can also use corn tortillas for a gluten-free option. Make sure to drain the tomatoes well to avoid excess moisture in the roll-ups.

Serving Suggestions

Serve the Ranchero Roll-Ups with a side of Mexican rice or a fresh green salad for a complete meal. They pair beautifully with Chicken Acapulco With Peanuts for a delightful dinner spread. Adding a dollop of sour cream or guacamole on top can enhance the flavors even further.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the roll-ups in a skillet over low heat until warmed through, or microwave them on a plate covered with a damp paper towel for about 1-2 minutes.
