Santa Fe Casserole Bake

Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco spices and seasonings
  • 2 c. chicken broth
  • 1/4 c. all-purpose flour
  • 1 c. sour cream
  • 1 (7 oz.) can diced green chiles
  • 1 pkg. corn or tortilla chips
  • 2 c. grated Monterey Jack or Cheddar cheese
  • 1/2 c. sliced green onions with tops

Instructions

  1. In a medium skillet, brown the ground beef and stir until crumbly; drain excess fat.
  2. Add taco spices and seasonings; blend well into the meat.
  3. In a small bowl, combine chicken broth and flour.
  4. Pour the broth mixture into the skillet with the beef; bring to a boil and cook until slightly thickened.
  5. Stir in sour cream and diced green chiles; blend well.
  6. In a 13 x 9 x 2-inch lightly greased glass baking dish, place half of the chips.
  7. Top with half of the beef mixture, half of the sauce, half of the cheese, and half of the sliced green onions.
  8. Repeat layers with remaining ingredients, ending with green onions on top.
  9. Bake uncovered in a 375°F oven for 20 minutes.
  10. Let stand for 5 minutes before serving.
