Ingredients

  • 3 boneless chicken breasts
  • 1 large onion
  • 1 small can tomato sauce
  • 1/2 cup mild picante sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 2 cups zucchini

Instructions

  1. Saute onion and chicken in a small amount of oil until chicken turns white.
  2. Drain the chicken and onion mixture.
  3. Combine the tomato sauce, picante sauce, cumin, oregano, and basil, then add to the chicken.
  4. Place the sliced zucchini on top of the chicken mixture.
  5. Simmer uncovered for about 15 minutes.
  6. Serve over rice.
