- Rub the beef roast with salt and pepper.
- Place the roast into a pan, fat side up. Do not cover or add water.
- Preheat the oven to 375°F.
- Cook the meat for 1 hour, then turn off the heat and leave it in the oven.
- Do not open the oven door at any time during cooking.
- Thirty or forty minutes before serving, turn the oven back to 375°F and cook for an additional 30 minutes.
- You can put the roast in the oven any time between 10:00 a.m. and 3:00 p.m. for an evening meal.
- Slice leftovers if any remain, ideal for sandwiches.
- Tape the oven door if necessary to prevent it from opening.
