Ingredients

  • 1 cup butter
  • 2 cups vanilla chips
  • 4 eggs
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons almond extract
  • 1 cup seedless raspberry preserves
  • 1 c. seedless raspberry preserves (Polanor All Fruit)

Instructions

  1. Melt butter over low heat.
  2. Add 2 cups vanilla chips but do not stir the mixture.
  3. Set aside to cool.
  4. Beat eggs until foamy.
  5. Gradually add sugar, beating until lemon color.
  6. Stir in melted butter and vanilla chip mixture.
  7. Add 2 cups flour, salt, and almond extract; mix on low speed.
  8. Spread half of the batter in a greased and floured 9x13 inch pan.
  9. Set the other half of the batter aside.
  10. Bake at 325°F (160°C) for 15-20 minutes, until golden.
  11. Stir 2 cups vanilla chips into the remaining batter.
  12. Melt raspberry preserves and spread over the baked layer.
  13. Spread the remaining uncooked batter over the preserves and sprinkle with sliced almonds.
  14. Bake at 350°F (175°C) for 35 minutes.
