Ingredients

  • 2 lb. boneless, skinless chicken breasts
  • 2 Tbsp. butter
  • 1 onion, chopped
  • 1/4 to 1/2 cup raspberry vinegar
  • 1/4 cup chicken broth

Instructions

  1. Melt butter in a skillet and brown the chicken breasts on both sides over medium-high heat.
  2. Remove the chicken from the skillet and set aside.
  3. Add chopped onion to the skillet drippings and cook, covered, over low heat until tender, about 15 minutes.
  4. Add raspberry vinegar to the skillet; raise heat and cook, uncovered, until the vinegar is reduced to a syrupy consistency.
  5. Whisk in chicken broth and simmer for about 1 minute.
  6. Return the chicken to the skillet and simmer gently in the sauce, basting often, until cooked through.
