Ingredients

  • 3 lb. fryer chicken pieces
  • 1 lb. kielbasa sausage
  • 2 lb. chopped tomatoes
  • 1 Tbsp. crushed dried mint
  • 1 c. dry white wine
  • 2 c. chicken stock or water
  • 3/4 tsp. ground cayenne pepper
  • 2 tsp. Louisiana hot sauce
  • 2 Tbsp. olive oil
  • 2 c. chopped onion
  • 1 c. chopped green onion
  • 1/2 to 3/4 Tbsp. salt
  • 1 c. chopped bell pepper

Instructions

  1. Rinse the chicken well.
  2. Simmer the chicken in water or chicken stock until cooked, then remove from the stock and let cool.
  3. Debone the cooled chicken and save the meat.
  4. In a large skillet or pot, heat 2 tablespoons of olive oil.
  5. Add chopped onions and green onions; sauté until softened.
  6. Add chopped bell peppers and cook for a few minutes.
  7. Stir in chopped fresh or canned tomatoes, crushed dried mint, cayenne pepper or hot sauce, soy sauce, and salt to taste.
  8. Pour in white wine and chicken stock or water; bring to a simmer.
  9. Add sliced kielbasa sausage and cooked chicken meat into the mixture.
  10. Simmer for about 30 minutes to allow flavors to meld.
