Chicken A'La Creole

Ingredients
- 3 lb. fryer chicken pieces ⓘ
- 1 lb. kielbasa sausage ⓘ
- 2 lb. chopped tomatoes ⓘ
- 1 Tbsp. crushed dried mint ⓘ
- 1 c. dry white wine ⓘ
- 2 c. chicken stock or water ⓘ
- 3/4 tsp. ground cayenne pepper ⓘ
- 2 tsp. Louisiana hot sauce ⓘ
- 2 Tbsp. olive oil ⓘ
- 2 c. chopped onion
- 1 c. chopped green onion ⓘ
- 1/2 to 3/4 Tbsp. salt ⓘ
- 1 c. chopped bell pepper ⓘ
Instructions
- Rinse the chicken well.
- Simmer the chicken in water or chicken stock until cooked, then remove from the stock and let cool.
- Debone the cooled chicken and save the meat.
- In a large skillet or pot, heat 2 tablespoons of olive oil.
- Add chopped onions and green onions; sauté until softened.
- Add chopped bell peppers and cook for a few minutes.
- Stir in chopped fresh or canned tomatoes, crushed dried mint, cayenne pepper or hot sauce, soy sauce, and salt to taste.
- Pour in white wine and chicken stock or water; bring to a simmer.
- Add sliced kielbasa sausage and cooked chicken meat into the mixture.
- Simmer for about 30 minutes to allow flavors to meld.
