Raspberry Galette

- Preheat the oven to 400°C. Line a baking sheet with parchment paper. Place pie crust on pan.
- Mix raspberries, granulated sugar, flour, hazelnuts and vanilla in a medium bowl. Spoon raspberry mixture into center of crust, leaving a 2 inch border. Fold edge of crust up over filling, pleating the crust as needed. Brush pie crust with egg, then sprinkle raspberry mixture with demerara sugar.
- Bake for 25 minutes or until golden. Serve warm with ice cream.
