Ingredients

  • 1 cup margarine or butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup raspberry jam

Instructions

  1. Mix margarine, granulated sugar, brown sugar, egg, and vanilla until well combined.
  2. Stir in all-purpose flour and baking powder until the dough comes together.
  3. If the dough is soft, cover and refrigerate for at least 1 hour.
  4. Preheat oven to 350°F (175°C).
  5. Press half of the dough evenly into the bottom of a greased or parchment-lined baking pan.
  6. Spread raspberry jam evenly over the dough layer.
  7. Crumble the remaining dough over the jam layer.
  8. Bake in the preheated oven for about 20 minutes or until golden brown.
  9. Allow to cool before cutting into strips.
