Ingredients

  • 3/4 cup Crisco
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract
  • 2 eggs, separated
  • 1 1/2 cups flour
  • 1 cup red raspberry preserves
  • 1/2 cup coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream Crisco, sugar, salt, and almond extract.
  3. Add egg yolks and mix well.
  4. Mix in flour until combined.
  5. Pat the mixture into the bottom of an oblong pan.
  6. Bake for 15 minutes.
  7. Spread hot crust with raspberry preserves.
  8. Sprinkle coconut evenly over the preserves.
  9. Beat egg whites until foamy.
  10. Gradually add sugar and beat until stiff peaks form.
  11. Spread the meringue over the coconut layer.
  12. Bake for an additional 25 minutes until golden.
