Ingredients

  • 1/2 cup white sugar
  • 1/2 cup butter, softened
  • 1/2 cup rice flour
  • 1 tablespoon almond flavoring
  • pinch of salt

Instructions

  1. Line an 8x8-inch pan with pie pastry.
  2. Spread raspberry or strawberry jam over the pastry.
  3. Mix the beaten egg, white sugar, softened butter, rice flour, almond flavoring, and a pinch of salt.
  4. Spread the mixture evenly over the jam.
  5. Bake at 375°F (190°C) until browned, approximately 20 to 30 minutes.
