Ingredients

  • 1 1/4 cup sugar
  • 2 tablespoon flour
  • 1/8 teaspoon salt
  • 1 tablespoon grated lemon rind
  • 3 eggs
  • 1 medium lemon, sliced thin
  • 1/2 cup water
  • 1/4 cup soft butter

Instructions

  1. Mix sugar, flour, salt, grated lemon rind, eggs, sliced lemon, water, and soft butter together.
  2. Pour the mixture into an unbaked pie shell.
  3. Place the top crust over the filling and flute the edges.
  4. Cut a vent hole in the top crust.
  5. Brush the top crust with beaten egg and sprinkle with sugar.
  6. Bake at 425°F for 10 minutes.
  7. Reduce oven temperature to 350°F and bake for an additional 40 minutes.
