  3. Saute onions, peppers, and garlic for 5 minutes in 2 tablespoons olive oil.
  4. Combine all vegetables in alternate layers with tomatoes in a casserole dish.
  5. Add 1/2 teaspoon basil, salt, and pepper to taste.
  6. Cover and bake for 30 minutes at 350°F.
  7. Remove cover and bake for another 15 minutes or until most of the juice is absorbed.
