Ingredients

  • 2 lb. dry codfish
  • 3 lb. white potatoes
  • 1 onion
  • 1 Tbsp. parsley
  • 1/2 stick butter or margarine
  • 2 large eggs
  • 1 tsp. baking powder

Instructions

  1. Soak the codfish overnight in water.
  2. Drain the codfish and place it in a saucepan.
  3. Cover the codfish with fresh water and bring to a boil.
  4. Boil until tender, about 45 minutes to 1 hour.
  5. Drain and cool the codfish.
  6. Debone the codfish if not boneless, flaking it with a fork.
  7. In a mixing bowl, combine the cooked, mashed potatoes, flaked codfish, chopped onion, parsley, butter, eggs, and baking powder.
  8. Season with salt and pepper if desired.
  9. Mash the mixture thoroughly with a fork or beat with an electric mixer until well combined.
  10. Shape the mixture into cakes or balls.
  11. Deep fry the shaped cakes in hot oil until golden brown all around.
