  • 2 cloves garlic, minced
  • 2 medium onion, thinly sliced
  • 3/4 lb. eggplant, peeled and diced
  • 1/2 lb. zucchini, unpeeled and sliced
  • 1 sweet green pepper, sliced into rings
  • 2 tsp. Italian seasoning
  • 1 tsp. sugar
  • salt (optional)
  • pepper to taste
  • 4 medium fresh or canned tomatoes, peeled and sliced

Instructions

  1. Heat olive oil in a heavy-duty saucepan, then add garlic, onion, eggplant, zucchini, and green pepper; sauté until vegetables are barely tender.
  2. Add Italian seasoning and sugar, mixing well to combine.
  3. Add tomatoes and simmer until vegetables are tender, about 20 to 25 minutes.
