Ingredients

  • 1 cup flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 1 cup yellow corn meal
  • 1 egg
  • 1 cup milk
  • 1/4 cup melted bacon drippings or oil

Instructions

  1. Sift together the flour, baking powder, salt, sugar, and cornmeal.
  2. Beat the egg in a bowl.
  3. Add milk and melted bacon drippings or oil to the beaten egg.
  4. Pour the liquid mixture into the dry ingredients all at once.
  5. Stir just enough to combine and remove lumps.
  6. Pour the batter into a greased 8 x 8-inch pan.
  7. Bake in a 425°F oven for 25 to 30 minutes until golden brown.
  8. Cut into squares and serve.
