Ingredients

  • 2 Tbsp. margarine
  • 1/4 cup diced bacon
  • 2 medium potatoes, finely diced
  • 4 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. seasoned salt
  • dash of onion salt

Instructions

  1. In an 8-inch skillet, cook bacon in one tablespoon of margarine until brown.
  2. Add potatoes; sauté until tender and golden.
  3. In a bowl, with a fork, beat eggs with salt, seasoned salt, onion salt, and parsley.
  4. Stir in the potato mixture.
  5. In the same skillet, heat the remaining margarine.
  6. Pour in the egg mixture and cook until eggs start to set at the edges.
  7. Using a spatula, draw the cooked edge toward the center so uncooked eggs flow to the bottom.
  8. When the omelet starts to brown on the bottom, divide it in half.
  9. Turn each half over to brown the other side.
  10. Lift each half with a spatula and place on plates.
  11. Serve immediately.

Tips & Substitutions

For a richer flavor, try using butter instead of margarine. You can add vegetables like bell peppers or spinach for extra nutrition. If you want a fluffier omelet, whisk the eggs more vigorously. Consider using leftover cooked potatoes for a quicker preparation. For a smoky flavor, add smoked paprika or use smoked bacon.

Serving Suggestions

Serve the omelet with a side of fresh fruit or a simple green salad for a balanced meal. Toast or crusty bread pairs well, adding a nice crunch. For a heartier breakfast, consider serving it alongside Cheddar Bacon Puffs for a delicious combo. A dollop of salsa or hot sauce can enhance the flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the omelet in a skillet over low heat, covering it with a lid to steam the eggs until warmed through. You can also microwave it on a plate, covered with a damp paper towel, for about 30 seconds.

Frequently Asked Questions

Can I make this omelet ahead of time?

Yes, you can prepare the filling ahead of time and store it in the refrigerator. When ready to eat, simply cook the eggs and add the filling. This makes it easier to enjoy a homemade breakfast on busy mornings.

What can I substitute for bacon?

If you want a vegetarian option, you can use diced mushrooms or cooked sausage. For a plant-based choice, try tempeh or tofu crumbles seasoned with smoked paprika to mimic the flavor of bacon.

Can I freeze the omelet?

Freezing the omelet is not recommended as the texture may become rubbery upon reheating. However, you can freeze the filling separately and then make a fresh omelet when you're ready to enjoy it.
