Ingredients

  • 2 1/2 cups sifted cake flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup soft shortening
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tablespoon grated orange rind
  • 1/2 cup orange juice
  • 1/2 cup nuts or coconut

Instructions

  1. Start heating oven to 400°F (200°C).
  2. Sift together cake flour, salt, and baking soda.
  3. Mix shortening with sugar, eggs, and grated orange rind until creamy.
  4. Gradually mix in the flour mixture alternately with orange juice.
  5. Stir in nuts or coconut.
  6. Drop by teaspoonfuls (about 2 inches apart) onto a greased cookie sheet.
  7. Bake for 10 to 12 minutes or until golden.
  8. Remove from oven and cool before serving.
