A hearty chicken corn chowder packed with tender chicken, sweet corn, tomatoes, and cheesy goodness, perfect for comforting family meals or cozy gatherings.

Ingredients

  • 16 oz. can new potatoes, whole and cut into chunks
  • Can Rotel tomatoes with lime and cilantro
  • Can corn, undrained
  • Can Cheddar cheese soup
  • Can cream of chicken soup
  • Can chicken broth
  • 4 boneless, skinless chicken breasts
  • scallions
  • shredded cheese

Instructions

  1. Cook chicken breasts with the can of chicken broth in the crock-pot until tender.
  2. Optionally, place frozen chicken breasts in the crock-pot in the morning and cook on low all day.
  3. Put the first five ingredients into a large pan, then add the cooked chicken and broth.
  4. Heat through until hot.
  5. Garnish with scallions and shredded cheese before serving.
