Microwave Chicken Broccoli Bake

A hearty microwave chicken and broccoli bake combining tender chicken, fresh broccoli, creamy sauce, and melted cheese for a comforting, quick, and versatile meal perfect for busy weeknights.

Ingredients

  • 3 lb. chicken pieces
  • 1/4 c. flour
  • salt and pepper to taste
  • 3 Tbsp. sunflower oil
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 2 tsp. turmeric
  • 3/4 c. milk
  • 3/4 c. light cream
  • 1 lb. fresh broccoli
  • 3 Tbsp. water
  • 1 (14 oz.) can corn, drained
  • 1 c. grated Cheddar cheese
  • 1 Tbsp. chopped parsley

Instructions

  1. Roll chicken pieces in flour seasoned with salt and pepper.
  2. Heat browning dish on Full power for 5 minutes.
  3. Add oil and chicken to the dish.
  4. Microwave on Full power for 2 minutes on each side to brown the chicken.
  5. Place lightly browned chicken pieces in a shallow casserole dish.
  6. Sprinkle remaining flour over the chicken.
  7. Combine cream of chicken soup, turmeric, milk, and light cream and pour over the chicken.
  8. Cover and microwave on High for 15 minutes.
  9. Place broccoli and water in the dish.
  10. Cover and microwave on Full power for 6 minutes.
  11. Drain the broccoli and arrange it in a single layer in the casserole dish.
  12. Add drained corn and 1/2 cup of Cheddar cheese to the chicken liquid.
  13. Spoon the mixture over the broccoli and arrange the chicken pieces on top.
  14. Sprinkle remaining cheese on top of the dish.
  15. Cover and microwave on High for 10 minutes.
  16. Sprinkle with chopped parsley and serve.
