Ingredients

  • 1 large pkg. jello (orange, pineapple or lemon)
  • 1 (29 oz.) can crushed pineapple with juice
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1 (3 oz.) jar pimento, chopped
  • 1/2 c. celery, finely chopped
  • 2/3 c. pecans, chopped
  • 1/2 pt. whipping cream
  • dash of salt (optional)

Instructions

  1. Drain the crushed pineapple and heat the juice until boiling.
  2. Stir in the gelatin until completely dissolved.
  3. Add the chopped pimento, softened cream cheese, finely chopped celery, chopped pecans, and whipping cream. Add a dash of salt if desired.
  4. Pour the mixture into a circular mold and chill until set.
  5. Unmold the salad onto a bed of lettuce.
  6. Serve with hot Parker House rolls and coffee.
