  • 2 Tbsp. vegetable oil
  • 2 red peppers
  • 2 garlic cloves
  • 4 chicken breast halves, skinned and boned

  • all-purpose flour
  • 1 cup chicken broth (fat-free)
  • 1/4 cup white cooking wine
  • 2 Tbsp. parsley, chopped
  • hot cooked rice

Instructions

  1. Melt butter and oil in a large skillet over medium-high heat.
  2. Add peppers and garlic; sauté until peppers are tender, about 10 minutes.
  3. Remove peppers from skillet and transfer to a bowl.
  4. Season chicken with salt and pepper.
  5. Lightly and evenly coat chicken with flour.
  6. Place chicken in skillet and sauté until light brown, about 4 minutes per side.
  7. Remove chicken from skillet.
  8. Place peppers back in skillet, add chicken broth and white cooking wine, and cook on high for 5 minutes until sauce thickens.
  9. Scrape up browned bits from the skillet as the sauce thickens.
  10. Return chicken to skillet and cook until no longer pink in the center, about 4-6 minutes.
  11. Place chicken and peppers on a platter and sprinkle with chopped parsley.
  12. Serve over hot cooked rice, cutting chicken into pieces.
