Ingredients

  • 2 red peppers, seeded and chopped
  • 1 1/2 c. water
  • 1 chicken bouillon cube
  • 1/4 tsp. Italian seasoning
  • 1 c. low-fat buttermilk
  • pepper to taste

Instructions

  1. In a medium saucepan, combine red peppers, water, chicken bouillon cube, and Italian seasoning.
  2. Heat to boiling.
  3. Cover and simmer over medium-low heat for 10 minutes.
  4. Cool slightly.
  5. Puree the mixture in a blender until smooth.
  6. Add low-fat buttermilk and blend again.
  7. Return the soup to the saucepan and heat without boiling or covering.
  8. Serve hot or cold.
