Ingredients

  • 1 Tbsp. extra Virgin olive oil
  • 1 medium onion, finely chopped
  • 2 c. red bell peppers, seeds and white veins removed, chopped fine
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 c. chicken stock

Instructions

  1. Heat olive oil in a skillet.
  2. Add finely chopped onion and red bell peppers; simmer until soft, do not brown.
  3. Add salt and freshly ground black pepper; stir to combine.
  4. Pour in chicken stock and simmer uncovered for 15 minutes.
  5. Cool the mixture slightly, then transfer to a blender and puree until smooth.
  6. Return the pureed sauce to the pan and simmer for an additional 15 minutes or until slightly thickened.
