Ingredients

  • 2 pkg. red raspberry jello
  • 2 c. hot water
  • 1/2 c. sugar
  • 1 (No. 2) can crushed pineapple, juice drained
  • 1 lemon or 2 Tbsp. lemon juice
  • 2 boxes frozen red raspberries
  • 1 pt. sour cream

Instructions

  1. Dissolve the red raspberry jello in 2 cups of hot water, ensuring no cold water is added.
  2. Add sugar, crushed pineapple (juice drained), lemon juice, frozen raspberries, and stir well until raspberries are separated.
  3. Pour half of the mixture into a 9 x 13-inch pan and chill until firm enough to spread sour cream over the top.
  4. Spread the sour cream evenly over the chilled layer.
  5. Pour the remaining jello mixture over the sour cream layer and chill until completely firm.
