Ingredients

  • 1/2 bunch fresh spinach, minced
  • 1 cucumber, cubed
  • 1 tomato, cubed
  • 1/2 small red onion, cut into 1/4-inch pieces
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

Instructions

  1. Mix spinach, cucumber, tomato, red onion, garlic, lemon juice, olive oil, salt, and black pepper in a large bowl. Cover with plastic wrap and refrigerate, 1 hour to overnight.
