Refrigerate Roll Dough

Instructions
- Dissolve yeast in warm water in a large bowl.
- Stir in mashed potatoes, sugar, shortening, eggs, salt, and 3 cups of flour; beat until smooth.
- Mix in enough remaining flour to make the dough easy to handle.
- Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 5 minutes.
- Place the dough in a greased bowl, turning to grease the top.
- Cover the bowl tightly and refrigerate for at least 8 hours but no longer than 5 days.
- Punch down the dough and divide it into 4 equal parts.
- Use 1/4 of the dough for any dinner roll recipe.
