Ingredients

  • 1 pkg. active dry yeast
  • 2/3 c. sugar
  • 2/3 c. shortening
  • 1 1/2 tsp. salt
  • 1 1/2 c. warm water
  • 1 c. unseasoned lukewarm mashed potatoes
  • 2 eggs
  • 6 to 7 c. all-purpose flour

Instructions

  1. Dissolve yeast in warm water in a large bowl.
  2. Stir in mashed potatoes, sugar, shortening, eggs, salt, and 3 cups of flour; beat until smooth.
  3. Mix in enough remaining flour to make the dough easy to handle.
  4. Turn the dough onto a lightly floured surface and knead until smooth and elastic, about 5 minutes.
  5. Place the dough in a greased bowl, turning to grease the top.
  6. Cover the bowl tightly and refrigerate for at least 8 hours but no longer than 5 days.
  7. Punch down the dough and divide it into 4 equal parts.
  8. Use 1/4 of the dough for any dinner roll recipe.
