Ingredients

  • 1/2 cup cider vinegar
  • 1/3 cup green peppers, red peppers, or can of pimentos
  • 1 teaspoon mustard seed
  • 3 stalks chopped celery
  • 1 cup sugar
  • 1 teaspoon salt
  • 2 1/2 cups water

Instructions

  1. Bring to boil the cider vinegar, water, sugar, celery seed, and mustard seed.
  2. Let the mixture get cold.
  3. Make a brine of 2 cups water and salt.
  4. Soak cabbage and peppers in the brine for half an hour.
  5. Drain off the brine, pressing to remove most of it.
  6. Add the cabbage and peppers to the vinegar mixture with the celery.
  7. Add salt to taste.
  8. Stir well and store in refrigerator.
  9. Use as needed. Keeps well for 3 to 6 months.
