Ingredients

  • 9 cups sliced cucumbers
  • 1 cup green pepper slices
  • 2 cups sugar
  • 1 teaspoon celery seed
  • 1 cup sliced sweet onion
  • 1 tablespoon salt
  • 1 cup dark vinegar

Instructions

  1. Slice the cucumbers and add salt, then stir to coat.
  2. Let stand for 1 hour and drain without rinsing.
  3. Stir in sliced sweet onion and green pepper slices.
  4. Combine sugar, dark vinegar, and celery seed in a pot.
  5. Heat until the mixture comes to a boil, then remove from heat and cool.
  6. Pour the cooled vinegar mixture over the cucumber mixture and stir.
  7. Transfer to a gallon container and refrigerate.
